Mary's Ribs
Rack of either pork or beef ribs.
In a large crock pot, add 1 tsp. liquid smoke and ¼ C water.
Cut ribs to 2 to 3 ribs.
Apply store bought Rib Rub of your choice to ribs. Both Sides
(I prefer Emeril Brand)
Set Ribs in crock pot so that ribs are vertical to bottom. Turn crock pot on high for 4 hours or 8 hours on low.
When done you have two choices.
1. Bag and freeze or refrigerate for later use. (When ready follow step 2.)
2. Apply BBQ Sauce of choice (Jack Daniels) and either broil for 2-5 min each side or grill. (Purpose here is to set the sauce, not caramelize or burn it.)
Ribs will fall from the bone; incredible flavor and unbelievably tender.

Southern Fried Chicken
½ C flour
1 Tbsp parsley
Dash pepper
1 tsp garlic powder
1 tsp chives
Dash onion powder and salt
1 can evaporated skim milk
Chicken breasts – deboned
Cooking oil
In a large cast iron frying pan: pour ½ C of cooking oil
Mix dry ingredients together in a bowl.
Pour milk into a shallow dish.
Soak chicken in milk. Cover each breast of chicken with dry mixture and place in frying pan. Cook each piece on medium heat. Add oil when needed.
Poor Man Gravy: Add remaining evap. Milk to frying pan and drippings and reduce. Add regular milk to thin or stretch gravy.

1/3 C Shortening, margarine, or butter
2 Tbsp Milk
2 Eggs
¼ C Chopped Walnuts
1. Combine 1 C flour, sugar, baking powder, baking soda, and salt. Add mashed bananas; shortening; and milk. Beat with an electric mixer on low speed until blended, then on high speed fir 2 minutes.
2. Add eggs and remaining flour; beat until blended.
3. Stir in nuts or sprinkle on top.
4. Poor batter into greased 8x4 inch loaf pan.
5. Bake at 350 for 55 to 60 min. or until a toothpick inserted near center comes out clean.
6. Cool for 10 min. on a wire rack. Remove from pan and cool thoroughly.
Tip: Blend as little as possible – it can make bread tough. I use a wisk.

1 ¼ C freshly grated Parmesan cheese, divided
2 tsp chopped fresh parsley
Freshly ground pepper
Ground Nutmeg to taste
1. Cook fettuccine according to package directions, omitting salt and fat. Drain well.
2. Melt margarine in a saucepan over medium heat. Add garlic, and sauté 1 minute.
3. Stir in flour. Gradually add milk, stirring with a wire wish until blended; cook, stirring constantly, 8 minutes or until thickened and bubbly.
4. Stir in cream cheese, and cook 2 minutes. Add 1 C Parmesan cheese, stirring constantly until cheese melts.
5. Pour cheese mixture over fettuccine; tossing well to coat. Top with remaining ¼ C Parmesan cheese, parsley, and pepper. Yield: 4 (1-cup) servings.

1 C chopped onion
1 1/3 lbs (4 medium) potatoes cut into ¾ inch cubes
2 ½ C water
2 chicken or vegetable bouillon cubes
1 pkg (10 oz) frozen chopped broccoli, thawed and drained
1 ½ C shredded Cheddar cheese
Salt and pepper, to taste
In 2 to 3-quart saucepan over medium heat, melt butter. Add onion; sauté 5 minutes. Add potatoes, water and bullion cubes. Bring to boil, reduce heat, cover and cook until potatoes are just tender, about 15 minutes. Remove 1 cup of potato cubes with slotted spoon; set aside. Pour contents of saucepan into container of electric blender. Holding lid down tightly, blend until smooth; return to saucepan. Mix in reserve potatoes and the broccoli. Over medium-low heat, gradually add cheese, stirring until heated through and cheese is completely melted. Season with salt and pepper
