Turkey Meatballs

1 pkg ground turkey
1 beaten egg
1 tbsp dried parsley
1/2 tsp dried oregano
1/4 tsp fresh ground pepper
1/2 C crushed gluten free pretzels
1/4 C finely diced onion

Mix together and create 1 - 1/5" diameter balls.
Place in non-stick frying pan on med-high heat with 1/4 cup canola oil.
Place all meatballs in pan and turn carefully with tongs until all sides are browned.
Place in freezer bags, or add to sauce and simmer away.

Yummy - Nobody will know they are turkey unless you tell!

Green Bean Tomatoes

Kendra’s Green Beans
(that are better than Steak!)


1 Can Green Beans, drained
1 Can Diced Tomatoes with Basil and Oregano
1 Cup Mozzarella Cheese (Shredded or cubed)

In a glass casserole dish with cover, mix all ingredients together and cover. Heat in microwave on Medium for 5 minutes. Serve and enjoy.

Ruby's Sonora Chicken Pasta

Got this from a co-worker. Don't want to get her into any trouble, so I'll hold back her name. :-)

Sauce
6 oz. jar of Tostitos Queso dip
1 small block of Velveta (optional)
1 small can of green chilis (optional)

1. Mix cheeses and chilis in a saucepan and heat on low.

Black Bean Salsa
6 oz. jar of your favorite salsa (Newman’s medium for me)
1 can Black Beans, drained and rinsed.

2. Mix salsa and beans in a bowl, set aside or chill.

Pasta
1 box Penne pasta

1. Cook according to directions on box.

Chicken
1 lb Boneless Chicken Breast
2 Tbsp Olive or Canola Oil
Garlic Salt

1. In a frying pan, add Oil and then Chicken. Sprinkle with salt on one side.
2. Cook over medium to high heat until chicken is cooked through.
3. Slice chicken into strips or chunks.

Putting it all together:
Place Penne on a plate. Spoon 2 or 3 Tablespoons of cheese sauce over the pasta.
Add a dollop (or more) of the Salsa on top of the cheese.
Place chicken on top or around the Salsa.
ENJOY!

Vicente's Buffalo Wings

Marinade
Wings
¼ C Butter Milk
½ C Hot Sauce

1. Marinate Overnight in zip lock bag.

Glaze
½ C Butter
½ Brown Sugar
½ C Buffalo Wing Sauce
1 tsp Red Wine Vinegar


1. Preheat oven to 375 degrees F.
2. Bake wings in preheated oven for 30 minutes, or until cooked through and crispy.
3. Meanwhile, in a skillet, combine glaze ingredients over medium heat.
4. Toss in baked wings, and coat well. Sauté for approx. 5 -15 min. on low heat.
5. Plate and eat with either Ranch or Blue Cheese dressing.

1/4 cup of Splenda Granulated
14 onz of Sweetened Condensed Milk Fat-Free or regular
1 spoon of Granulated Cinnamon

Mary's Ribs

Rack of either pork or beef ribs.

In a large crock pot, add 1 tsp. liquid smoke and ¼ C water.
Cut ribs to 2 to 3 ribs.
Apply store bought Rib Rub of your choice to ribs. Both Sides
(I prefer Emeril Brand)
Set Ribs in crock pot so that ribs are vertical to bottom. Turn crock pot on high for 4 hours or 8 hours on low.

When done you have two choices.
1. Bag and freeze or refrigerate for later use. (When ready follow step 2.)
2. Apply BBQ Sauce of choice (Jack Daniels) and either broil for 2-5 min each side or grill. (Purpose here is to set the sauce, not caramelize or burn it.)

Ribs will fall from the bone; incredible flavor and unbelievably tender.

Southern Fried Chicken and Poor Man Gravy

Southern Fried Chicken

½ C flour
1 Tbsp parsley
Dash pepper
1 tsp garlic powder
1 tsp chives
Dash onion powder and salt
1 can evaporated skim milk
Chicken breasts – deboned
Cooking oil

In a large cast iron frying pan: pour ½ C of cooking oil

Mix dry ingredients together in a bowl.
Pour milk into a shallow dish.
Soak chicken in milk. Cover each breast of chicken with dry mixture and place in frying pan. Cook each piece on medium heat. Add oil when needed.

Poor Man Gravy: Add remaining evap. Milk to frying pan and drippings and reduce. Add regular milk to thin or stretch gravy.
